The cold water bubble hash or the butane or whatever solvent and why? I'm just curious as to what you guys think about it.

IMO I like bubble hash because of the simplicity.
ISO isn't bad if you use high grade alcohol like everclear.

If I have more then a qp of trim, then bubble bags for sure.... easier, quicker, and safer cleaner product.
Bho is good for few oz's of trim.. bigger batches are a pain and take longer to purge

Ethanol is the only solvent I'd use regularly. Bubble or dry ice shaker is where it's at. Unless you can afford to go super critical co2 which it where is really at.

ive never used co2 or ethanol... how potent does the product come out?

Its more a case of taste and clarity. Potency will be determined on genetics of material involved. Butane makes a fairly clean product, but less volatile solvents that are exposed to your shit longer will be darker in color and less pure.
