I like your culinary thoughts, I love to cook on a charcoal grill/smoker. Never been in the food biz (except for KFC right outta high school, lol) but I love to cook.

It is Hawaiian food. Pork lau is pork and taro leaves steamed inside of a Ti leaf, lomi salmon is shredded salmon with tomato(I'm not sure what all is in it, but its so good), and poi is taro root pounded into a paste(its a starchy food). Since I don't know how it is prepared, I'm not sure exactly what is in everything.
I'm with you on the mayo. Mustard is the way to go. I use mayo only if the meat is way too dry, or I use the Japanese mayo

Wasabi is the shit. In the rare event that I snack, wasabi peas are my go to. I like the spicy mustard that you find at real Chinese restaurant even better though.
