Made some jerky overnight for the first time. Came out pretty good imo. Just need to go back and remove all the fat as I forgot to when I started.

Just beef.
I used the carne asada meat as it is a pretty thin cut.

this is the first one i tried. it was... okay. it was missing a cayann(sp?) pepper/ cumin mix. just wasnt hot at all. too sweet for me...

this one was good as far as the spice, but it was missing something. the meat came out a bit tough too.

this one was good, but i carried a few things from the others into this one.
brisket
soy sauce
teriyaki sauce
liquid smoke
Worcestershire sauce
dark corn syrup
onion powder
garlic powder
meat tenderizer
crushed red pepper flakes
sesame seeds
cajun seasoning
franks red hot sauce
black pepper
cumin
6 oz of beer (budweiser)
brown sugar
i tossed the sliced brisket in the marinade at 8pm then threw the covered bowl into the fridge. by 8 tomorrow i will move on to drying out the meat.
this was one i came up with myself. it was damn good!
notes from the above recipe...
the jerky came out damn good. its still not as good as i would like to have it. maybe a little less soy sauce and some diff spices. more cayenn pepper, some chili pepper, leave out the franks red hot sauce... either way, its good. still 10x better than store bought and theres enough for 2 large freezer bags.

Nice, I have never tried to make jerky but it looks like it would be fun
Stoner- really? I used to work on an ostrich farm and had ostrich products all the time and could never get into it. Not the meat and not the eggs either

Yeah, but then again i was raised eating a lot of deer, and ostrich. Since my
uncle owned an ostrich farm. That is until someone came in, and slaughtered
most of them, stole a few, and stole all of the eggs.
I haven't had any in a few years though.

my dad use to raise emus...  i was maybe 10 or 11 when they tried. at one point they had a close to 5 babies in our house running around in a big ass fridge box.
the meat was okay... nothing special. i did, however, have one big ass fucking emu egg omelet one morning. shit was fucking HUGE!

Yeah the ostrich farm I worked on was the largest in the US, probably 150 birds

I myself am a pretty accomplished jerky maker
if you want a strip style of jerky get a roast or a London broil type of chunk of meat and slice it real thin AGAINST the grain
its a lot cheaper that way and you can make it how you want
I also like doing the jerky shooter thing with ground beef 96/4
there aint nothing in a store that's got shit on it

im going to the grocery store now and get me some meat and make a run cause you got me thinking bout it haha

All true. Thats some real thick jerky. Always slice like this guy said if you want it to last.
I used to make about 5-10 pounds of jerky a month when I was a preteen.

It's extremely easy if you have a dehydrator.
I used to make all my own marinades and shit.
