It's shrimp, calamari, andouille, celery, bell peppers and onions. I hadn't added the roux at that point.

Cooked it all down in some beer and spicy garlic butter until everything was reduced and browned. Then combined with the roux and okra for bit and topped with some rice/scallions.

I use this method with seafood pasta and jambalaya since I like to have gumbo as a side. Cooking the roux and the meat/veggies separately means I can use them to make a couple different things at once.

That picture was from making it for a gumbo and a creole pasta. Took one half and added it to some fettuccine noodles that I stirred with fire-roasted tomatoes and a tiny bit of the roux. Then I took the other half and used it for the gumbo.

I thought it looked a little basic, too...but remix's next post cleared it up.

Gyro version. Before the sauce. Topped with tzatziki and goat cheese after the pictures. 




That first one was chicken and lamb coated in yogurt and a chicken 65/curry blend. Then cooked in ghee.

The pasta in the chicken dish is a version of Turkish ravioli. Normally they would be stuffed with lamb/gyro but these were stuffed with mushrooms and goat cheese since I already had lamb.

After the pasta is boiled I sautee them in garlic butter and sumac. The gyro version has the same thing but with potato gnocchi instead of the ravioli. 

I topped everything with currants in the chicken/lamb version. And the sauces on that one were tahini, a mint yogurt sauce, and harissa.

And the veggies in both are tossed with sumac, lemon, olive oil and vinegar. Garlic naan with the chicken version and pita for the gyro version.

Sounds great. Nice lookin' plates...

I keep meaning to order some sumac, or drive into the city to see if Whole Foods has any.

I've been wanting to try cooking with it for years, but my local grocery never has it...

I've had decent luck with this brand. Never bought from the website, though.
