I know that a 200watt light produces more lumens than 2 x 100watt lights. So you would think it works the same with PAR. Right?

Short answer: Not necessarily, but there should be some correlation between wattage and PAR output.

Each bulb have diferent PAR rating and it depends also on your bulb Kelvin temp.

So, i think twice the lights = twice the par is false, unless the bulbs are the same.
