I'm planning on building a custom ebb & flow system for a sea of green grow I'm going to do in a few months and I was wondering what the optimum tray depth is for that type of grow?

uh
deeper is better, what matters is how deep is your overflow, if you buy a premade table tray it will be proper depth.
if you go DIY you can make your table very deep, and make your overflow however high you want it.
