The grinder is a good indicator of properly dry bud. If it doesn't grind right its not ready to cure. Its nice to have a nice grinder too.
If you like the way it smokes, its smokable, but it sounds like you need to throw them in some paper bags overnight, maybe two or three depending on room humidity. If the stem does not snap it is not dry. It makes a sound.
