I just brewed some peach wine. Got another batch of 30 bottles fermenting now (this time fruit punch).
my bro makes deadly rum... he said its 3x easier then wine. I think im gonna try and do a batch
id love to brew a cider sometime too

I've made various batches of alcohol in the past using home made stills.
You are on a good system.
The simple and best ones I made used an electric frying pan, a pressure cooker and some copper tubing and pipe from a local building supply store.
Back then I was producing 95% ethanol so I could produce some good weed oil.
For safety I would suggest not brewing it in the house, but outside around open air.
When I use to do it, I built a small open porch area off a back shed I had in my back yard so there was no chance of getting a build up of vapor in an enclosed area and risking an explosion or fire.
Lets face it, the last place you ever want to fuck up, is inside a house where explosions or fires can draw a lot of attention from local authorities.
About 20 years ago, I knew a guy ( just a friend of a friend) who was trying to make weed oil inside his basement.
He was using glassware, and somehow managed to blow up the house.
WHen the cops and fire department landed at his house, they actually condemned the house, and would not allow him to reenter it.
 (not the actual house image, just giving an example)
For 10 years, all the windows and doors were boarded up with plywood and the guy spend most of those years between court and jail fighting the charges that he was manufacturing drugs.
Moral of the story.
Go out of your way to be safe in a lab, because once you fuck up really bad....it is not so easy to fix things.

no risk of that, just have to discard the first percentage of distilled goods.
you want to discard the methanol.
