Start off quick drying them then slow it down once you have an excess of moisture off of them.

I harvested early for this very reason. When I trimmed I cut out all of the rot out. After I hung them I placed a tower fan on low blowing towards them from about 10' away. Shits been hangin for almost 4 days and I'm in the clear. I'm sure you'll be fine

It could just be a weak plant.
I guess more than that it could be a plant that is used to dryer climates and has not evolved any type of mold resistance.
I'd just clalk it down to lesson learned and use another pheno next season.
Dry that shit quick or your in for a world or hurt. Mold spreads exponentially but you can slow it down with lower temps.
