This is a really simple recipe.  I took some shortcuts today that I usually don't take, but I didn't feel like spending the entire day in the kitchen and spending a ton of money on one meal.

My basic recipe for pulled pork

1 pork loin (size varies depending on how many people you need to feed, since it's me and my girl its 2 lbs)

Cheap BBQ sauce for the slow cook (used a kraf brand BBQ tonight)

Good BBQ sauce for the final dish (used Stubb's spicy BBQ tonight)

The sauces were my short cuts, normally I make a western carolina bbq sauce to go with my pork.  Vinegar based with a nice helping of brown sugar to cut down the tang along with some ketchup to add some extra flavor and thickness.

Now, there are a bunch of different ways to cook your pork.  Since it's winter outside and I don't have access to a smoker, I use my crock pot to cook my meat.  As always slow and long is the best way to cook your meat, with 2 lbs its a 4 hour MINIMUM cook, with a preference on 5-6 hours.  The more meat you want to cook in one go the longer it sits.  So I take the cheap BBQ sauce (which if im buying usually is something that has "smoke" in the label, in this case it's a mesquite smoke) and pour enough in to barely cover the bottom (1-2 cups or so depending on the size of your crock).  This helps keeps the meat moist and infuses it with some flavor.  My crock pot cooks a little hot, when I run short on time I run it on high for an hour or two, then medium for the rest of the cook.  Otherwise it's medium for the entire duration.  I let the meat cook (tonight's time will be five hours), when it's done I throw the chunk of meat into a disposable aluminum tray (or cookie sheet) and use some forks to shred the meat apart.  Note: At this point if your meat isn't falling apart when you breathe on it, it hasn't cooked long enough.  Once the loin is shredded I pour some sauce on top, fold it in, pour some more in, fold it again, and do this until it's all nice and coated.  Heat up some kaiser rolls, slice them, plop the meat on top, add more sauce if needed, and serve!

It's a dead simple recipe, just set and forget, perfect for sunday football.  If you start by noon you'll have your dinner by the time the night game starts.  Goes well with beer (newcastle for me tonight), bacon wrapped brown sugared greenbeans, and some cornbread :smile:

It was damn tasty, I personally think it could have used at least another hour in the crock pot but it turned out well. If you guys liked this recipe then you should head to my place in the summer when I cook up the 8 lb bacon wrapped pork loin on the grill.  Nice to see some other bbq fans in this place, if we ever get to gather in one spot we should bring some grills and our best recipes.  Nothing cures the munchies more then some tasty BBQ.
