they fetch 3gs each and don't grow back and if you get kidney punched on your remaining kidney your a dead motherfucker. (very possibly)
you can sell a slice of liver for like 40-50gs and it grows back.

you could probably fetch 3gs for a kidney at any time if you knew someone in the bizz, same with the liver price.
if you find a rich guy who needs your organs you could demand half of his assets and he'd probably cough up.... I mean shit what do you expect?
