I am thinking of getting two 5x5x6 tents, one for flowering and the other for vegging. Is a 1000 watts in each to much with only 6ft of head clearance? What is the optimal distance ratio for a 1000 watt HPS?

Well that is all just related to how long you want to veg your plants, and what type of training you are willing to do. Flower em early and you will be just fine, 6 feet is plenty of room.
