Some recommend 70/30, some say that trichomes will ripen (Edit: and THC will be converted into CBD) even after harvest.
Wouldn't it then be good to harvest a little earlier than intended, like with an amber/cloudy ratio of like 50/50?

Not all trichomes are going to turn amber.
Just look for most of them to be dark, then its just a numbers game.

They definitely turn a bit after harvest. I've pulled with 25% amber on a sativa and after a week or so in the closet was left with 50% easily.
I'm not sure if this is the trichs actually maturing and converting or if its because they're..."dead".

It's because they're drying and losing water. So that membrane ruptures and you get a little bit of oxidization.
