Here's what I cooked last time I had to impress a bitch. It sounds impressive but it's super easy, both of which are key;
A bed of quinoa flavored with mango, orange, cilantro and mint. On top of that place a nice piece of almond and pine nut crusted whitefish (I went with tilapia, doesn't really matter much), pan seared and then bake to finish, be careful not to dry it out.
In a separate saucepan combine a cup of cream cheese with a little milk and a couple diced RED jalapenos. heat it just until it simmers and then remove it from the heat. It won't really simmer like you're used to because cream cheese is so thick, but you want to heat it so the flavors merry and the water of the milk will cook off so you're back to a similar starting consistency as regular cream cheese.
Grill up a couple pineapple rings (super easy and quick) then place them on top of the fish. fill the center of the pineapple rings with a dollop of the jalapeno cream cheese and serve!

her mom loves me
ended up cooking beer battered fish tacos (tilapia) with a chunky tomato/onion/jalapeno/cilantro/avacado/lime juice salsa.
was pretty good for how inexperienced i am in the kitchen.
