Yea, that's what I don't like about our dumplings, when my mom made them perfect with the right texture where they were not snout balls (wrong texture) they taste really good. I cannot even eat them if they aren't cooked with the right texture, I like them to be firm.
But all this talk of both dumplings has made me think of making some chicken and dumpligs.
But I want to make them different, I want to put chicken inside of the dumplings, kind of asian style dumplings instead of a doughball inside of the original chicken and dumplings soup/gravy.

Although most of them do not contain crab meat, but imitation crab that is actually a fish.

the only thing better than a crab rangoon is a buffalo chicken rangoon 
and all this dumpling talk has persuaded to try and make some chicken and dumplings tonight

I think I need a better dumpling recipe...
they're better after sitting for a day but I still feel the whole dish came out sub par
