So what are they? I try to assume right off the bat that the conspiracy theorists are insane. That would mean that these planes are spraying something for a legitimate reason... shouldn't that reason be on record somewhere? What is that shit they're spraying?

They're not spraying anything, the correct term is contrail as in condensation. Condensation happens when you run a hot jet engine in very cold moist air. it's nothing but water and jet exhaust.
