That looks good. Good job 
As for when to harvest, get a jewelers loupe or anything really as long as it is at least 60x magnification.
Once you can see that close then you can tell.
Edit: and it's best to check on the more inner calyxes and not the outer leaves as they usually age faster than the inner parts.
